Ripe jackfruit sliced and vacuum-fried in coconut oil at low temperature. Jackfruit has a flavour somewhere between banana and pineapple, and crisping it concentrates it rather than flattening it.
Good for: lunchboxes, hiking, or scattered over yoghurt or ice cream.
