Snack Collection
Indonesian snacking is savoury more often than sweet, and it is usually built on something whole rather than something extruded. That is what is here: tempeh sliced thin and fried until it snaps, whole fruit and vegetables vacuum-fried at low temperature so they crisp instead of caramelising, Bali cashews cooked slowly in honey, and sorghum biscuits made from a grain Indonesia grew long before wheat arrived. Read the ingredients on any bag. Most of them list three things.

Moringa Collection
In Indonesia moringa is a vegetable, not a supplement. The leaf, daun kelor, goes into soup the way spinach does here, and it grows on trees you will find in half the villages in Java. La Moringa dries and mills it, and this is the range built from it: the leaf powder on its own, a drip tea with jasmine, sorghum biscuits with moringa worked through the dough, and Javara's moringa noodle. Grassy, green, and far more useful in a kitchen than the capsule aisle suggests.

Rice & Noodles Collection
Javara works with smallholder farmers to keep heirloom Indonesian crops in commercial use, which is a polite way of saying they buy the varieties that would otherwise disappear. From them we take four rices, including two all-in-one kits that cook up blue and gold, and six vegetable noodles with the vegetable worked into the dough rather than sprinkled on afterwards. All steamed and dried, never fried.

Spices Collection
Most supermarket spice is a blend from several origins, ground months ago and cut with anti-caking agent. These are single-origin, milled from whole root, bark and leaf, and nothing else goes in the jar. Turmeric and cinnamon from West Java, nutmeg from the islands that started the spice trade, vanilla darker and smokier than Madagascar, and the crispy fried shallots that go on top of almost everything Indonesians eat.

Indonesia grows some of the most distinct coffee in the world and almost none of it reaches Canada with its origin still attached. Ours does. Every bag names the village, the altitude and the processing method, from Bajawa on Flores to the Gayo Highlands in Aceh, Tana Toraja in Sulawesi, and Kintamani in Bali. We ship the beans green and roast them here, so what arrives is fresh rather than months old.
