Indonesian vanilla is darker and smokier than Madagascar. These are whole cured pods, so you scrape the seeds and use the empty pod to flavour sugar or milk afterwards. Nothing gets wasted.
How to use it: split lengthways, scrape the seeds into custard, ice cream base or cake batter. Drop the empty pod into a jar of sugar and leave it a fortnight.
