Kaffir lime leaf is the note that makes a Thai or Indonesian curry taste like one. Fresh leaves are almost impossible to buy here; dried, they keep for months and release the same citrus oil the moment they hit hot liquid.
How to use it: drop two or three whole leaves into curry, soup or coconut broth and fish them out before serving. Tear them first to release more oil. Steep in hot water for tea.
