Indonesian cinnamon: bolder and hotter than the cinnamon most Canadian kitchens keep.
Most supermarket cinnamon is cassia from a blend of origins. This is single-origin Indonesian bark, milled fine, and it carries more heat and less sweetness than what you are used to. Use slightly less than a recipe asks for the first time.
How to use it: stir into porridge and coffee. Add to slow-cooked beef or lamb. Bake into anything you would normally cinnamon.
